Date & Cardamom Mousse with Crumble

A luxurious and creamy dessert combining the natural sweetness of dates with the warm aroma of cardamom. The smooth date mousse is layered with a buttery golden crumble, creating a perfect balance of rich, creamy, and crunchy textures in every spoonful.

Medjool or Khalas dates, pitted

Cold whipping cream

Cream cheese

Brown sugar

Cold unsalted butter, diced

Preperation

Step 1

Combine the flour, brown sugar, and oats (if using). Rub the cold butter into the mixture with your fingertips until it resembles coarse crumbs. Bake at 170°C (340°F) for 12–15 minutes, or until golden brown. Allow it to cool completely.

Step 2

Soak the dates in hot water for 10 minutes, then drain. Blend the dates with the cream cheese, ground cardamom, vanilla extract, and a pinch of salt until smooth and creamy.

Step 3

Whip the cold cream until soft peaks form, then gently fold it into the date mixture until fully combined.

Step 4

Spoon the mousse into serving glasses and chill for at least 2 hours.

Step 5

Just before serving, top generously with the crumble for a delicious crunchy finish.
