Date-Marinated Chicken Thighs

Tender chicken thighs are marinated in a rich blend of sweet Sukari dates, barbecue sauce, garlic, and warm spices, then oven-baked until perfectly caramelized. The date-infused marinade creates a delicious balance of smoky, sweet, and savory flavors, making this dish both comforting and full of depth.

Sukari dates, pitted

Warm water
1 cup
Barbecue sauce
2 tbsp
Light soy sauce
2 tbsp
Tomato paste
2 tbsp
Apple cider vinegar
2 tbsp
Vegetable oil
4 tbsp
Garlic cloves
4 pieces
Salt

Black pepper
½ tbsp
Crushed red chilli flakes

Step 1

Soak the pitted dates in the warm water for 5–10 minutes until softened.

Step 2

Transfer the dates and soaking water to a blender. Add the barbecue sauce, soy sauce, tomato paste, apple cider vinegar, oil, garlic, salt, black pepper, and crushed red chili flakes. Blend until smooth.

Step 3

Pour the marinade over the chicken thighs and marinate for at least 2 hours.

Step 4

Arrange the chicken in a baking tray lined with parchment paper.

Step 5

Bake in a preheated oven at 200°C using top and bottom heat for 30–45 minutes, or until the chicken is fully cooked and nicely caramelized.

Serve with potato wedges and fresh bread.
